One Dish Meals.

Fajita Bowl

6 oz. lean ground turkey or beef (10% fat or less)
Shredded lettuce or spinach
Chopped tomatoes
Chopped bell peppers
Diced jalapenos
2 Tbsp. Guacamole
Salsa
Sprinkle of reduced fat Mexican cheese blend
Chopped Cilantro

 

 

Turkey Chili
1# lean ground turkey (10% fat or less)
1 can (14.5 oz) tomato sauce
1 large can (28 oz.) diced tomatoes
1 cup chopped bell peppers
1/2 cup chopped onion
1-2 cloves minced fresh garlic
1-2 medium chopped zucchini
1 tsp. dried oregano
1 tsp. chili powder
21 tsp. cumin
1 tsp. paprika
1/2 Tbsp. garlic powder
Salt and Pepper to taste
2 Tbsp. coconut oil or olive oil
1 can black beans (optional)

Heat 1 Tbsp.oil in a saucepan over medium heat.  Sautee onion and fresh garlic for 1-2 minutes.  Add ground turkey, seasoning with half of each spice as it cooks.  Cook until completely browned and set aside.  In a separate pan, heat 1 Tbsp. oil and sautee the zucchini and bell peppers.

While this cooks, start the chili base.  In a medium pot, combine the tomato sauce, diced tomatoes, and the rest of the seasonings over low to medium heat, stirring from time to time.  Add the cooked ground turkey and veggies.  Let the flavors combine for 10 minutes or more (the longer this cooks, the better), lowering the heat as needed if it starts bubbling up.
