Super Food Salad

 

A while back I was introduced to a version of this salad from the deli of my hometown’s local grocery store.  They coined the name, so I kept it.  🙂  I loved this dish so much I took it apart at home and made a note of each ingredient, as well as tried to find a similar tasting dressing.  I make this salad quite a bit when my husband needs a quick potluck dish for work.  It’s always very popular, and the leftovers are always nice to have!

 

Ingredients:
Kale
Blueberries
Edamame
Halved Cherry Tomatoes
Thinly Sliced Red Onion
Shredded Carrots
Sunflower Seeds
Sliced Almonds
Dried Cranberries (reduced sugar or no sugar added)

 

I like to use Marzetti Simply Dressed Pomegranate Vinaigrette for my dressing.  It does have 6 grams of sugar per 2 Tbsp. serving, but it’s not a bad choice if used sparingly.  Feel free to make your own dressing or choose another (hint:  the healthiest ones are usually in the refrigerated aisle of the produce section).  Check out the ingredients, fat, calories, sodium, and sugar amounts.  A little fat is good — you need fat to properly absorb the fat-soluble vitamins in the salad.
